Low Carb Chicken Tacos with Cheese Shell


For Shells

  • 2 cups Shredded I used sharp cheddar
  • 1 can Olive Oil Non Stick Spray

For Stuffing

  • 2 cups Shredded Chicken
  • 1/2 block Cream Cheese You can use the entire block
  • 1/2 cup Diced Onion I used purple onion
  • 1 handful Spinach Leaves Use however much spinach you want
  • 1/2 cup Shredded Cheese I used sharp cheddar
  • 1 tbls Olive Oil


First, the stuffing

  1. Heat your olive oil in a skillet. Throw in the diced onion and saute until tender.

  2. Add in your shredded chicken and cream cheese. Stirring until cream cheese is melted. 

  3. Add in the spinach and stir until it's wilted. 

Time to make the shells

  1. In another skillet (or clean the one you just used), spray non-stick spray and heat. When it's hot, add a handful of shredded cheese. Make sure to spread the cheese out like you're making a tortilla shell. 

  2. When it's cooked on one side, use your spatula to scrape it up and flip to the other side. Use however much cheese you want to make your "shell" the right size. 

  3. After both sides have cooked, you can then stuff your shell with the chicken mixture you just made. Fold over once for "taco" or you can even roll it to make it like an enchilada. 

  4. I got impatient making shells so I made four my first batch. And they ended up being tacos rather than enchiladas. It doesn't have to be beautiful, but it is tasty!! 

  5. You can use the leftover shredded cheese over the top if you want these extra cheesy.
